Tea Ritual Tuscan Style: “A cup of tea is a cup of peace”…”You can’t buy happiness but you can buy tea, and that’s kind of the same thing”- “Una tazza di tè è una tazza di serenità. Non si può comprare la felicità, ”ma si può comprare del tè, ed è un po’ la stessa cosa”

Dalla mia vita inglese ho portato con me tanti momenti belli molti dei quali, spesso, legati alla più britannica delle bevande: il tè.  Insieme a questo, una notevole quantità di tazze, tazzine e teiere nonché un tipico “scalda- teiera” di lana. All’inizio non avevo capito cosa fosse, poi ho scoperto trattarsi di una sorta di cappellino di lana “indossato” da una teiera, per tenere caldo il tè.  Più inglese di così…

In Gran Bretagna il tè è parte della vita: è il rituale afternoon tea, autentico indicatore sociale,  in tutte le sue numerose sfumature, a seconda dell’ambiente in cui si svolge.

E’ la rassicurante cup of tea bollente bevuta nei momenti più difficili, quando è necessario un po’ di conforto e rassicurazione. E’ la mug, la tazzona  preparata a metà mattinata di un giorno impegnativo.   E’ la pausa necessaria per riprendere forze o  concentrazione.  E’ la “pozione magica” che coccola, rassicura ed unisce le persone, dovunque si trovino.

Let’s put the kettle on and get cozy!

Mettere su la kettle, cioè accendere il bollitore elettrico, è la frase chiave, il momento risolutivo in ogni crisi familiare.   Il magico tè con tutte le sue variazioni e le sue mille foglie.

Gli aromi del tè sono quello che più somiglia al mondo del profumo. Come in una preziosa bottiglia di profumo, in una teiera,  una gamma infinta di combinazioni aromatiche da cui prendere spunto.

Ma con il tè gli odori diventano anche sapori.

Un’esperienza sensoriale

Entrare in una “proper” Tea Shop è un’esperienza “sensoriale”: pareti piene di barattoli con infinite combinazioni di tipi di foglie ed infusi da annusare e provare. Scatole e scatoline di metallo, legno, ceramica, ognuna con un mix diverso dal nome suggestivo.

Tè all’Ibisco, Tè Rosa e Menta, Tè Turco alla Mela e, il mio favorito, una miscela che inizia dalla Vaniglia, prosegue con il Frangipani e porta con sé  il richiamo di mamme dai grembiuli infarinati e biscotti appena sfornati in una domenica di pioggia. Davanti al profumo che sale dalla mia tazza mi devo concentrare per non farmi trasportare via nelle mie cucine immaginarie…

Tè in sacchetti, bustine o in foglie…il tè in Inghilterra è considerato al pari della cioccolata, un alimento di conforto, come dicono gli inglesi “comfort food”.  Eccolo l’aggettivo che per me meglio descrive una buona tazza di tè: rassicurante…

Così lasciando la vecchia Inghilterra alle spalle, ho lasciato anche un pezzettino di me tra i tavolini di Tea Room insolite e sperdute tra la nebbia di antichi villaggi di campagna oppure, nelle città, tra  tazze di porcellana a fiori in eleganti sale da tè in stile vittoriano.

Gran Bretagna e Tè sono, nel mio cuore, intimamente connesse ed inscindibili, in un tintinnio di piattini, argenteria e coloratissimi, e forse un po’ improbabili, dolci inglesi.

Dall’Inghilterra alla Toscana

Ma come ho affrontato la dipendenza da tè al ritorno in Toscana? Ho iniziato da un’accurata ricerca dei migliori tè sul mercato e le più fornite Tea Shop della zona. Ho capito che occorre pazienza ma che è possibile bere una ottima tazza di tè anche lontano dall’Isola.

Basta memorizzare alcune regole di base, come “Non avventurarsi mai nell’ordinare un tè in un bar qualsiasi”.

Mentre il caffè è una “roba nostra” e quasi dovunque andremo, troveremo un caffè eccezionale, ordinare un tè può riservare delle sorprese. Una tazza di acqua calda dal colore indeciso accompagnato da uno sguardo di commiserazione per la certezza che non siate in buona salute.

Il vento sta cambiando…

Ma il vento sta cambiando anche sul continente e  sale da tè e tea shop stanno fiorendo anche  nelle città toscane accanto alle deliziose Erboristerie che, al contrario, mancano in Inghilterra.

Ho recentemente portato delle colleghe d’oltre Manica in una elegante Tea Room fiorentina. Dovevamo concordare dei passi importanti da fare per  lavoro.  Il tè era quindi direi… strategico.

Profumi e tazze di tè

Entrando ci ha avvolto un profumo di abete ed agrumi, leggero e deciso che sembrava provenire dal legno del bancone. Ordinando mi è sembrato di sentire un piacevole profumo di Rose e Gin…La cameriera ha preso i nostri ordini e, girandosi si è lasciata alle spalle una scia di albicocche fresche…

Forse era la mia immaginazione… Ci siamo messe comode,  una accanto all’altra,  le belle teiere calde hanno scaldato in un attimo le nostre mani e le idee, raffreddate dal vento tagliente fuori.

Abbiamo parlato, le nostre idee sparpagliate sul tavolo come carte da gioco.  Dovevamo trovare un filo logico e decidere i passi da fare.  Ma ce l’abbiamo fatta. Abbiamo trovato la soluzione ai nostri problemi, intorno a quel tè fiorentino,  così lontano dall’Inghilterra.  La torta all’arancio combinata al cioccolato amaro ci ha dato una mano…

In England, tea is part of everyday life: it is the afternoon tea ritual but also the piping hot comforting tea cup sipped when in need of reassurance, during hard times. It’s the comforting mug  prepared half-way through a challenging day or the restoring hot drink at the end of hard work. It is the “magic potion” that reassures, soothes and unites people wherever they are.

A sensory experience

Entering a “proper” Tea Shop is a “sensory experience”: walls full of jars with endless types of tea leaves to smell and try;  Boxes, cases, tins, each one with a special blend with evocative names; sachets or loose leaves …tea should be counted as comfort food.

Here it is, the adjective that best defines the drink to me is “comforting”.

In England I left my tea-passion behind, among the small tables of unusual tea rooms lost in the fog of the English countryside as well as in the elegant Victorian style tea rooms of cities, with their fine bone china tea sets and their delicate floral designs. So Great Britain is to me indissolubly linked to tea and its colourful tea pottery and tea cozy (that I always imagine made by some sweet old lady knitting by the fire)

From England to Tuscany

But what happened once back in Tuscany? How did I handle my tea-love?  I simply started an accurate and careful research of the best blends available, the top tea rooms and the best supplied tea shops of the region.   And…I’ve found that it is still possible to enjoy a lovely cup of tea even so far away from the “island”.

Just memorize a “basic rule”: never attempt ordering a cup of tea in an ordinary Italian bar. While coffee is an Italian-thing and you will always have a fantastic espresso wherever you are, ordering a tea can be quite a disappointing experience equivalent to a cup of hot water by the undefined colour accompanied by a  look of commiseration meaning “ you poor thing…are you feeling sick?”

The wind is changing…

But the wind is changing on the continent too and tea rooms and shops are flourishing in our cities next to elegant and original Erboristerie (herbal shops) offering a wide choice of tea blends from all over the world.  I recently took some colleagues coming  from England  to an elegant Tea Room in Florence.  it was a  work meeting , so the tea was a “strategic”one.

Perfumes and Cups of tea

As soon as we entered, we were surrounded by an intense  scent of citrus and Christmas tree, maybe it was coming from the wooden counter, or …I thought so.   When ordering, I thought I smelled a pleasant perfume of Rose and Gin…The waitress kindly took our order and, when turning around, she left behind a trail of  fresh apricots… Maybe it was my imagination.

We made ourserselves comfortable, side by side. It was very cold outside. The beautiful warm teapots, in an instant, warmed up our hands as well as our minds and ideas started to flow freely and smoothly.

We found a solution to all our questions , sitting at the table around that florentine tea, so far from old England. The orange cake combined with bitter chocolate did the rest…
